Quinoa Chocolate Cupcakes

Ingredients:

  • 2 cup cooked quinoa, cold
  • 1/3 cup milk (substitute almond milk)
  • 4 large eggs
  • 1 tsp pure vanilla extract
  • 3/4 cup butter, melted and cooled
  • 1 1/2 cup organic cane sugar (substitute 1 cup honey)
  • 1 cup unsweetened cocoa powder
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking powder
  • 1/2 tsp salt

Direction:

  1. Combined all ingredients in food processor. Blend well.
  2. Bake in 350 degree oven for 20 minutes.
  3. Store in refrigerator.
